  1. boil the potatoes in a pot with lots of water. cook until a fork easily slides in. drain and immediately mash to a fine texture puree. You can use a ricer or a food mill, if you have them, though a potato masher is sufficient for the desired texture. allow the puree to completely chill.
  2. Add salt and potatoes flour to the mashed potatoes and knead to a smooth paste. divide the mixture into a ping pong sized balls. Set aside.
  3. Heat the olive oil in a large saute pan over medium-low heat, add the onion and cook for about 5 minutes until translucent. Add the cubed chicken and spices. Stir until the chicken turns white. Taste and add more salt if needed. Remove from heat and Chill. Add the raisins and mix well.
  4. Flatten a potato ball using your hands and fill with about a teaspoon of the seared chicken and onions mixture. close the ball, folding the remains tightly. flatten the kube, and apply the egg wash before you fry it.
  5. Pour enough oil into a frying pan to come 3 cm up the sides. Place over medium heat and wait until the oil is hot. Fry the kube for about 2-3 minutes on each side until golden. Place the kube on a plate lined with paper towel to soak excess oil.
