Eucalyptus, the jerusalem - Land of Israel
restaurant,
established a long time ago in a cosy
hut in Talpiot under a huge Eucalyptus tree,
moved to the center of town a few years ago,
and
continues its tradition of reviving the cuisine of
this Land.
At Eucalyptus you will find many of
the same dishes,
foods and herbs which formed
the basis of the now-disappearing Land of Israel
kitchen.
At Euaclyptus, Khubeiza leaves (of
Jerusalem 1948 siege fame)
are cooked together
with cyclamen leaves stuffed with veal,
Akubit
hagalgal (a tenacious thorn), which becomes a
delicate tidbit.
